Ranch-Seasoned Pork Tenderloin

Monday’s dinner was a pork tenderloin and mashed potatoes. This was a two-part recipe, but I am not going to cook the second part, so all the meat when towards this meal.

I was not able to get a 2lb pork tenderloin, so instead I got two 1lb tenderloins. Left out the peas and carrots.

When cutting the tenderloins, the meat was super tender and did not want to slice into medallions. I was able to get a few nice slices, but the rest looked like large chunks of shredded meat. It was really delicious. I wound up having some as my lunch by itself without reheating it.
