So my husband and I were married last year. We had a friend make our wedding cake and we saved the top tier for our anniversary. Spent a little longer in the freezer than I would have liked. Finally got around to thawing the cake and it was a little dry from its storage time. I read online that you can get a little moisture back into baked goods with a little cream. I decided to slice the cake vertically to get little discs and used my basting brush to put a thin layer of heavy whipping cream on the top. Microwave for 15-20 seconds. Tasted awesome.
